Mundo Novo — A natural Bourbon x Typica cross found at Mineiros do Tiete in Sao Paulo in 1943 and developed by the Instituto Agronomico de Campinas. Vigorous and high yielding, it became a backbone of commercial Brazilian coffee and a parent of several rust-resistant lines.
Chocolate, nuts and caramel sweetness over low, soft acidity with a round, heavy body that rarely throws faults.
Pour-over at 92-93 °C, 1:14-1:15, medium grind with a slightly longer drawdown, to build body and a cocoa finish.
